1. Classic Indian Cuisine (non-vegetarian) (Introductory class II)

Experience the world of Indian vegetarian cooking where Indian food comes to life with wonderful flavors produced by the Indian spices.  Learn to use them to make a wholesome meal from scratch. Mala has a B.S. in food and nutrition and has an extensive cooking background.   Spend the evening cooking an authentic feast, served in traditional Indian atmosphere (music & Incense).  Class will begin with introduction to spices.  Remember to bring your appetite and enthusiasm for this fun filled evening!

• Appetiser: Chicken samosa (popular pyramid shape pastries stuffed with delicious chicken filling,  flavored    with onion, ginger and spices served with mint chutney) or Tandoori Chicken

For anyone setting out to cook Indian Vegetarian for the first time, this is the class for you. Vegetarian food comes to life with wonderful flavors produced by the  Indian spices. Learn how to use them to make a simple vegetarian meal from scratch. Learn easy recipes to treat your family and friends to an "Authentic Indian Meal" (appetizer, bread, curry, rice, accompaniment). Bring your enthusiasm and appetite for an evening of fun.

3.Indian Style Chinese Food (Indo- Chinese Fusion food) 
Instructor:  Mala Patel (Bachelors in Food and Nutrition)                              

The Populaity of Chinese food in India is reflected by the ever growing number of Chinese restaurants all over the country.  The food served in these restaurants has deviated to a great extent from the original Chinese food.  The recipes covered in this class are some of the most popular Chinese dishes as prepared and enjoyed in india. You would not find this kind of Chinese foodin any Chinese restaurants here.  If you like garlic and ginger this class is for you.

Menu:

Sweet corn soup with fried wonton’s

Paneer Chili: Stir-fried Paneer cubes(home made cheese) in garlic, ginger, green chillies, and different sauces, garnished with cilantro.

Vegetable Manchurian: Manchurian is an Indo - Chinese (a combination of Indian and Chinese Cuisine). They are vegetable balls cooked in soya base sauce and spiced with garlic ginger, onions etc. It can be made into a wet (with gravy) or dry dish. Gravy is usually eaten as main course with either rice, noodles or Naan. And dry stir-fried manchuraian balls a re served as appetizer.

Rice: To use as accompaniment to Manchurian gravy or

Hakka Noodles: Noodles tempered with sesame seeds, and chilli powder, topped with carrots, cabbage, onions and green peppers.

4. Shahi (Royal) Indian Vegetarian Dishes
 
Mala Patel loves the royal vegetarian dishes known as Shahi (in Hindi) because of their rich flavors and will show students how to make some of the best in this course. In addition, she’ll prepare fabulous Indian bread. 
Vegetable shahi Kebabs with sweetbrown chutney

Paneer tikka masala (Homemade cheese cubes in a creamy onion and tomato sauce with raisins and cashews. This dish is garnished with cream and served with Jeera fried rice at a medium spicy level as served in Indian restaurants.)

6.  Simple foods from India (from Midwest state of india)
   

This menu is formulated to put our belly to rest after the Holiday season. This menu includes Simple, Easy to digest, Healthy, non fried, comfort food, from Gujarat a mid-west state of india. Every meal Gujarati dishes usually have a very subtle taste that makes it truly distinct from other Indian cuisines.  Lot of emphasis is laid on maintaining hygiene while cooking.

• Appetiser: Steamed Chickpea Dhokla with cilantro chutney

• Peas and Eggplant vegetable dish with indian bread.

• Indian bread chapatti (Open fired roasted thin flat bread)

• Vegetable Moong daal Khichadi (rice dish with beans (moong daal)): "Khichdi", literally means "hotch-potch", where you cook rice and lentils together, and throw in a bunch of spices, and maybe some vegetables of your choice along with garlic and ginger. "Kaddhi" is yogurt soup, made of buttermilk and besan (chickpea flour) Together, spiced with touch of ginger, they create a healthy, satisfying and very comforting meal that no restaurant menu can match.

• Yogurt soup to accompany with Khichadi (rice dish) or Tempered Butter Milk To Accompany Khichaddi (Rice dish)

• Almond saffron milk: Warm sweet Saffron, almond, cardamom milk at the end (if time permits)

Snack, Appetiser and Desserts from india:2weeks   
 

Snacks and appetizers are an important part of Indian cuisine. They can be treated as appetizing savories to be served before a meal as light dishes for lunch or supper, or they can be used as side dishes for a more substantial meal. The majority of them can be eaten hot or cold.  Desserts from india are integral part of Indian cuisine, with milk based being a predominant feature. Astounding variety of sweets are available from different part of country. It is worth knowing that most Indian desserts are aided with digestive property, so little portion of these exquisite dessert is a perfect ending to each meal.

   

Menu Week I April 27th :Rice Flakes with corn , Alu Wada (Fried spicy potatoe balls covered with chickpea flour) , Vegetable Bread Rolls (With  spicy potatoe Stuffing).

   

Desssert :    Gulab Jambun (Famous brown balls in sugar syrup flavored with Rose water and cardamom),  Carrot Halwa .

   

Menu Week II  May 4th  Tues:Snack: Spicy Puri ( Indian bread)Farsi Puri),Vegetable Samosa Famous Pyramid shaped Appetiser served with Sweet Brown Chutney and mint chutney, Diamond shaped steamed dhokla.

   

Dessert:  Kheer (Indian Rice Pudding flavored with Almond, saffron , Pistachi and cardamom)

   

Cost: $80 for both class or $55 for any one class
